Sodium Bisulfite (NaHSO₃) is also known as Sodium Hydrogen Sulfite is a white, crystalline, inorganic salt with a slight sulfurous odor is a white, crystalline inorganic compound with a slight sulfurous odor, commonly used as a reducing agent, preservative and antioxidant. It is highly soluble in water, creating a slightly acidic solution. It is widely applied in food preservation, water treatment (dechlorination) and industrial processes like papermaking and photography. It prevents food browning, disinfects, removes excess chlorine from water and acts as a stabilizer in pharmaceuticals.

Applications of Sodium Bisulfite:

Food Preservation: It is commonly used as a food preservative and antioxidant to prevent enzymatic browning in dried fruits, potatoes and seafood. It also prevents oxidation and microbial growth in wine, preserving flavor.
