Sodium Metabisulfite (Na2S2O5) is an inorganic white, crystalline powder used widely as a preservative, antioxidant and disinfectant in food, beverages and industry. When dissolved in water, it releases sulfur dioxide, which kills bacteria and prevents food spoilage. It is commonly used in winemaking, dried fruits and water treatment, industrial bleaching and as a tree stump remover. It can cause allergic reactions. Sodium Metabisulfite is used primarily as a preservative, antioxidant and reducing agent. It is used in preserving food (dried fruit, wine, seafood), sanitizing winery equipment, treating industrial water to remove chlorine, mining for gold extraction and bleaching textiles & pulp.
Applications of Sodium Metabisulfite:
Food and Beverage Industry (Preservative/Antioxidant):
Seafood: Sodium Metabisulfite prevents melanosis (black spots) in shrimp and crustaceans.
Winemaking & Brewing: Sodium Metabisulfite is used as a sanitizing agent for equipment and to control microbes/oxidation in wine.
Processed Foods: Sodium Metabisulfite is used in baked goods to make dough easier to handle, as well as in jams, dried fruits and snack foods.
Beverages: Sodium Metabisulfite is used in fruit juices, cordials and soft drinks to stop browning.
Water Treatment and Environment:
Dechlorination: It neutralizes residual chlorine and chloramines in wastewater and municipal water.
Wastewater Treatment: It reduces harmful hexavalent chromium into less toxic trivalent chromium.
Industrial and Chemical Processes:
Mining: It is used in the extraction and precipitation of gold from solutions and in ore flotation processes.
Textiles & Leather: Sodium Metabisulfite acts as a bleaching agent in textiles and for deliming/treating hides in the leather industry.
Photography: It is used as a preservative in developer solutions.
Pharmaceutical and Agriculture:
Pharmaceuticals: It acts as an antioxidant to increase the stability of drugs.
Agriculture: It is used to help remove tree stumps by breaking down lignin.
Preservation: Sodium Metabisulfite fungicide in shipping, preventing mold in goods like clothing and shoes.
